Introduction

This is a variation of a recipe I found on the website. This is a variation of a recipe I found on the website.
Number of Servings: 10

Ingredients

    Black Beans (1 lb bag of dry) cooked in crockpot with water to cover over the top about an inch.
    Chicken Boullion Cube
    2 cups water
    1 cup of frozen corn
    1 can of Rotel Tomatoes
    8 oz cooked very lean top round beef with all fat removed
    1 envelope of Spicy Chili Mix Seasoning (ALDI)

Directions

In a 4 QT Crockpot. Add cleaned and rinsed Black Beans. Fill crock pot with water up to 1 inch from the top. Add one chicken boullion cube and cook on high about 3 hours.

When the beans are done, add one can of Rotel, 2 cups of water, 1 envelope of ALDI chili seasoning, cooked chopped top round roast. (leftover is great) and 1 cup of frozen corn.

Let this cook in the crockpot for 2 more hours.

Just before dinner, boil quick pearl barley with a little salt. Add the barley to the bowl with the soup. (Calories do NOT include the barley) This is also really nice to add some lime juice to your bowl if you like it. I do!

Makes 10 servings (a nice bowl full about 1 1/2 cups)
