Introduction
A lite and healthy traditional ham, green bean, and potato soup with a touch of classical herbs to give you something extra to figure out!!! Ingredients

1 lb of chipped deli-style honey turkey ham (it has less fat and is cheaper that regular honey ham).
1/4-1/2 cup of finely minced celery (include the greens on top for added nutrition and taste).
1.5 teaspoon of finely minced garlic
1 teaspoon of horseradish (opt)
2 8 oz cans of french cut green beans drained.
1 8 oz can of asparagus tips
1 8 oz can sliced cooked new potatoes
Low sodium chicken stock (enuf to cover all the veggies n ham)
2 tablespoons of EVOO
Dried parsley
Dried Thyme
Dried Oregano
Dried diced bay leaf (or one whole bay lead)
Black pepper
Directions
In a big kettle or pot, add celery to EVOO and black pepper, garlic and horseradish, sauteing until celery is very soft.
Add in ham to carmalize and cook down.
Add the rest of the veggies and saute down for a few mins.
Add chicken stock, cover and bring to a rolling boil.
Reduce heat to low.
Add herbs to taste...about a 1/4 of a palm-full of each.
Let cook on low for about 5 mins to soften dried herbs. Turn off heat and serve.
Also can be frozen...just let completely cool before dishing it out in containers. Makes great single serving dishes to re heat!!!! And its very low in fat!!!!!!
