Ingredients

8 oz pork tenderloin - cubed (chicken or lamb works well also)
1 TBSP Olive oil
1 med. onion - chopped
1 med. apple - chopped
2 cloves garlic - chopped
1/2 cup raisins
1 TBSP pumpkin pie spice
1 TBSP curry powder
1 TSP salt
1 can diced tomatoes
2 cups cooked rice (brown, white, etc...you know the drill)
shredded coconut for garnish
Directions
Heat oil in 12" skillet over medium high heat.
While oil is heating, combine all remaining ingredients (except the pork) in a medium bowl and set aside.
Add cubed pork to hot skillet and cook until lightly browned.
Add the remaining ingredients to the skillet and bring to a boil. Reduce heat and simmer for 25 - 30 minutes or until the apples and pork are nice and tender.
Serve over rice w/ shredded coconut for garnish if desired.
Makes 4 main dish servings.
