Introduction

Ingredients

4 to 6 ears fresh corn on the cob.
1 Tbsp butter or neutral oil (canola).
1 medium onion, chopped.
2 medium potatotes, peeled and chopped.
2 tomatoes, cored, seeded and chopped (optional).
1 cup nonfat milk
1/2 cup chopped fresh parsley or other spice such as dill (optional).
Directions
1. Shuck corn and use paring knife to strip corn from cob. Boil, then simmer cobs in 4 cups water for 10 minutes.
2. Saute onion and potatoes in butter about five minutes until onion softens. Add tomatoes if using and stir for another minute or two.
3. Strain cob stock into onion-potato mixture. Bring to a boil, then turn down so mixture simmers, for 10 minutes until potatoes are tender.
4. When potatoes are tender, after about 10 minutes, add corn kernels and milk and heat through. Taste and add salt and pepper if necessary and garnish with parsley. Serve.
