Introduction
This is the best sweet potato casserole I've ever eaten. This is the best sweet potato casserole I've ever eaten.Number of Servings: 29
Ingredients

About 10 sweet potatoes
1-21oz. can crushed pineapple with the juice
1/2 cup orange juice concentrate
1/2 cup water
1/4 cup cornstarch
1 tsp. salt
160g sucanat or 1 cup brown sugar
Topping:
70g sucanat
1/2 cup chopped pecans
Directions
Rub sweet potatoes with oil and place into a large roasting pan. Cover and bake at 350 until tender. Set aside to cool.
In a small saucepan, combine remaining ingredients. Cook and stir until boiling. Reduce heat and continue to cook and stir for another minute. Spray a 9"x13" baking pan with non-stick spray. Spread a little of the pineapple mixture over the bottom. Peel sweet potatoes and place 1/2"-3/4" thick slices over pineapple mixture. Spread half of remaining pineapple mixture over sweet potatoes. Repeat layers. Sprinkle with Topping sucanat or brown sugar. Can refrigerate at this point until ready to bake. Sprinkle with pecans. Bake at 350 for about 1-1/2 hours or if just out of the refrigerator, bake for 2 hours. You can bake for less time, it tastes better, more carmelized if baked longer. Makes about 29-30 servings of 100 grams each. But who can eat that little?
