Ingredients

    Ingredients:
    8 cups cubed Butternut Squash
    1 cup Carnation Fat Free Evaporated milk
    1 medium Onion, chopped
    1/4 tsp ground Nutmeg
    1 tsp Olive Oil
    3 cups Blue Menu Chicken Broth - no salt added
    1 tsp ground black pepper
    2 oz asiago cheese, grated

Directions

Boil squash 20 min until tender - drain

Saute onion in tsp of olive oil until lightly browned, add squash, milk, broth - simmer 15 min. blend until smooth. add pepper and nutmeg. stir

makes 8 x 1 cup servings. Top with 1/4 oz grated asiago cheese.
