This is a great way to eat your fruits and vegetables at lunch. I would suggest eating with whole wheat bread. It's a hearty lunch and really fills you up without feeling guilty. Ingredients

1 can of white chicken in water
3 tbsp. of Mayonnaise
1 cup seedless red grapes, halved
1 cup chopped red apples (I use honeycrisp)
1 cup celery diced
1 juice of one lemon
1/2 cup scallions
Directions
1. Combine ingredients in a large bowl. Be sure to squeeze the lemon right after you chop the apples. Add more mayonnaise to a desired consistency.
2. Enjoy with whole crackers or bread. YUM!
