Ingredients

    * 1 tube of packaged polenta
    *1/2 cup on Italian blend shredded cheese
    * 1 Tbsp. extra-virgin olive oil
    * 1 medium red onion, thinly sliced
    * 1 pound sweet Italian sausage
    * 1 large portobello mushroom, stem removed, cap thinly sliced
    * 1 tablespoon finely chopped rosemary leaves
    * 1 cup red wine
    * Salt and pepper

Directions

Preheat the oven to 350 degrees. Slice the polenta into 1/2 inch disks, and place them on a non-stick baking sheet. Top with the cheese. Cook in the oven for about 15 minutes.

In a 12 to 14-inch saute pan, heat the oil until it is smoking and add the onion. Cook until just softened, or 2 to 3 minutes, and add the sausage pieces. Cook until browned on all sides and drain the fat from the pan. Add the portobellos, rosemary and red wine and bring to a boil. Simmer 10 minutes covered, or until sausage is cooked. Remove the sausage mixture from the heat, season, to taste, and pour over polenta. Serve immediately.
