Mexican Cold Salad Mexican Cold Salad

Ingredients

    salt (1 tsp)
    avocado (2 small) or 1 large
    lemon juice
    chopped onion (1/2 medium)
    2 medium tomatoes chopped
    jalapeno peppers minced (to taste-no seeds)
    1/4 bunch cilantro
    radishes (6-8)

    1 10 oz bag of cooked peeled shrimp

    chop the avocado into bite size pieces
    break shrimp into bite size pieces and use as much or as little as you like

    salt to taste

    serve on tostado shells (less salt)
    spice up or down with more or less jalapeno, onion and salt

this receipe makes 4 one cup servings

Mix well and serve cold on tortilla chips - very tasty and easy to make and serve

LEAVE AVOCADO SEEDS IN SALAD TO RETAIN GREENESS OF AVOCADO (GOOD FOR ABOUT 3 DAYS REFRIGERATED)
