Ingredients

    2 lbs calamari, cleaned, tentacles separated from body, body sliced into wide rings
    2 tbsp olive oil
    2 large cloves garlic, crushed, pressed, or minced
    Zest of 2 lemons
    1/2 tsp black pepper
    1/4 tsp crushed red pepper
    Juice of 2 lemons (at least 1/4 cup)
    3 tbsp white wine
    2 tbsp unsalted butter
    3 tbsp capers, drained
    dash of salt


Directions

Combine calamari, olive oil, garlic, lemon zest, black and red pepper. Reserving 2 tsp of lemon juice, pour the rest in with the calamari mixture. Marinate 15-30 minutes.

Heat grill to medium, covering grates with tinfoil if they are widely spaced.

Bring wine, butter, remaining lemon juice, and capers to a boil and remove from heat.

Cook calamari 3-5 minutes until they start to shrink and puff up. Remove from grill and add to the warm butter mixture. Season with salt if desired. Serve warm.
