Ingredients

    1 lb beef stew meat, lean
    2 Tbsp olive oil
    2 Tbsp flour to coat the meat
    2 14 oz cans of stewed tomatoes
    1 cup carrots, raw, sliced into half-inch chunks
    4 cloves of garlic, minced
    1 4oz can of mushroom pieces, drained
    1/2 cup yellow onion, chopped
    1/2 cup seedless raisins
    1 Tbsp fresh rosemary, minced
    1/2 bell pepper, chopped
    1/4 tsp black pepper
    1/3 cup filtered water
    1/2 cup beer or red wine (optional)

Directions

Coat the meat with flour and brown quickly in a little butter or healthy oil. Pour it all into a slow cooker and add the rest of the ingredients. Cook on high 5 hours, or low for 11 hours.
