Ingredients

    1 16 0z fillet Mahi Mahi
    2 T Extra Virgin Olive Oil
    2 tsp Crushed garlic
    2 tsp Rosemary, dried
    1 tsp Thyme, dried
    2 packets True Lime (crystallized Lime) *
    Cracked Black Pepper
    Salt

    * 2 T Lime Juice and/ or lime slices may be substituted

Directions

Makes 4 4-oz servings

Preheat oven to 425 F. Cover non-stick flat pan with aluminum foil. Place fillet on pan and make 4 diagonal slashes across the fillet with a sharp knife (this will keep the fish from curling up while cooking). Pour olive oil over fish and rub into both sides to coat. Sprinkle garlic over fish, rub in and ensure that garlic is gotten down into the slashes. Do the same with the rosemary, thyme and True Lime. Salt and Pepper to taste. Bake for 8-10 minutes or until fish flakes easily with a fork.
