Ingredients

    Bulgur, dry, 1 1/4 cup
    Water, 1 1/4 cup
    Green Beans, 2 cups cooked, chopped into 1 inch pieces
    Reduced Fat Feta Cheese, 3 oz or 3/4 cup
    Parsely, 1/4 cup chopped
    Fresh Mint, 1/4 cup chopped
    Red Onion, 1/4 thinly sliced
    Lemon Rind, 1/2 tsp grated
    Lemon juice, 1/4 cup
    Olive Oil, 2 1/2 tbsp.
    Salt, 1/2 tsp
    Pepper, 1/4 tsp
    Kalamata Olives, 4 olives finely chopped

Directions

Recipe makes 6 servings (serving size 1 cup)
Combine bulgur and boiling water in large bowl. Let stand 30 minutes or until water is absorbed. Add remaining ingredients to bulgur; toss gently. Serve at room temperature.
