Ingredients

    2 zucchini
    1/2 green pepper
    1/2 red pepper
    1 cup chopped red onion
    15 medium baby carrots
    1 8ounce bag baby bella mushrooms
    2 tablespoons olive oil
    Kosher salt
    Pepper

Directions

Cut up all veggies
place in baking pan
drizzle with olive oil
salt and pepper as desired
mix thoroughly
Bake uncovered in 400 degree oven for 35-40 minutes
Eat and enjoy

    Incredible!
    Added a few quartered red potatoes, so all I had to make with it was a meat dish. Also added some fresh rosemary, which just adds to the flavor. Very delicious! Will definitely be making again! - 1/23/11
