Ingredients

1 lb of sirloin steak
1 tbs olive oil
1 cup water
1 medium onion
1/2 ts garlic powder, or to taste.
1/4 ts ginger
4 medium green peppers
1 tbs cornstarch
3 tbs light soy sauce
2 tomatoes
Brown rice if desired, not included in calorie allocation.
Directions
1.Trim fat from meat and cut into 2 inch strips against the grain.
2. On medium heat add olive oil to skillet.
3. Add meat, cook until brown on both sides, five minutes.
4. Stir in water, onion, garlic powders and ginger. Heat to a boiling; reduce heat. Cover and simmer 5-8 minutes.
5. Add green pepper strips during last 5 minutes of simmering.
6. Meanwhile, blend cornstarch, sugar and soy sauce together in a small bowl.
7. Add cornstarch to meat mixture. Cook, stirring constantly until mixture thickens and boils. Boil and stir for 1 minute more.
8. Cut each tomato into eights and place in skillet. Cook for about 3 minutes more until tomatoes are heated.
Serve with brown rice, if desired. Voila!
