Introduction

I've tweaked several recipes to make my own version of pumpkin muffins. You could use egg substitute to make it even more light and healthy. Very flavorful, spicy pumpkin taste. Ingredients

    3 cups all-purpose white flour
    1 cup brown sugar (not packed)
    1 cup granulated sugar
    1 tsp baking soda
    1 tsp salt
    1 tbsp all-spice
    1 tbsp cinnamon
    1 tbsp nutmeg
    Cinnamon, ground, 1 tbsp (remove)
    Nutmeg, ground, .5 tbsp (remove)
    2 eggs
    1/4 cup canola oil
    15 oz canned pumpkin
    1/2 cup raisins (optional)

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease 18 muffin cups or line with paper muffin liners.

In a large bowl, stir together all of the dry ingredients. In a separate bowl, beat the eggs and stir in pumpkin, oil, and eggs.

Stir pumpkin mixture into flour mixture until smooth. Add raisins if desired. Scoop batter into prepared muffin cups.

Bake in preheated oven for 25 to 30 minutes, until a toothpick inserted into the center of a muffin comes out clean.

Makes 18 muffins.
