Introduction

Ingredients

1lb lean ground beef
8 lasagna noodles (you could substitute for wheat pasta but I didn't because I don't like it!)
2 cans tomato paste
1 can of your favorite pasta sauce
1 16oz package small curd cottage cheese (light or lowfat, whatever you can find; nonfat will work as well but I don't like it)
1 16oz bag 2% mozzarella cheese
1/4 cup reduced fat parmesan
1 egg (or 1/4 cup of egg beaters)
1/4 cup parsley flakes
black pepper (I didn't measure so use your best judgement!)
Directions
Brown beef. Drain fat. Mix in tomato paste and pasta sauce. This is your meat mixture.
Mix cottage cheese, egg or egg beaters, parmesan, parsley, and black pepper. This is your cheese mixture.
Boil 8 lasagna noodles until they are al dente (not cooked all the way--still chewy).
Grab a 9 x 13 rectangular casserole dish (I used a pyrex one). Spray pan with nonstick cooking spray. Heat oven to 350.
Lay four al dente lasagna noodles along the length of the pan. There will be some extra space at the ends.
Layer cheese mixture first, then a layer of mozzarella, then layer the meat mixture. Then add another layer of noodles, cheese mixture, mozzarella, and meat mixture. If desired, top with lowfat parmesan cheese.
Bake for 30 minutes at 350 until cheese is mostly melted. *Note: fat free mozzarella does not melt completely!
