Ingredients

    2/3 c. flaxseed meal
    1/4 c. vegetable broth (I freeze the broth from cooking vegetables in ice-cube trays)
    1.5 lbs. ground turkey
    1/2 small onion, chopped
    1 large egg, lightly beaten
    1/4 c. Amy's (or Kamuela1's Homemade) salsa
    2 tbsp. chpped fresh parsley
    1 tbsp. mustard flour
    1 1/2 tsp. salt
    1/2 tsp. ground rosemary
    1/2 tsp. turmeric
    1/2 tsp. cayenne (red) pepper
    1/2 tsp. curry powder
    1/3 c. carrot mash (saved from juicing carrots, kept in freezer), or grated carrots

Directions

Preheat oven to 350º F. Place flaxseed meal and vegetable broth in large bowl, stir until well combined. Let set 5 minutes. Add remaining ingredients, leaving aside 1/2 the salsa for later, (turkey, onions, egg, salsa, parsley, mustard, salt, rosemary, turmeric, and carrot mash). gently mix until well combined. Transfer mixture into loaf pan, brush top with remaining salsa. Bake until internal thermometer 165º or approximately 90 minutes. Serves 6.
