Ingredients

    1 tsp Olive Oil
    1/2 lb Turkey Kielbasa, cubed
    small onion (about 1/2 Cup) chopped
    2 carrots, chopped
    1 Can Pinto Beans, rinsed & drained
    1 Celery Stalk, chopped
    4 Cups Chicken broth, fat free/reduced sodium
    10 pkg Frozen Spinach, thawed and squeezed dry

Directions

Heat oil in large nonstick saucepan. Sauté kielbasa until lightly browned, about 3 mins. Add onion, carrots, celery, broth and beans, bring to boil. Cover, reduce heat and simmer until vegetables are tender, about 10 mins. Add spinach and continue to cook until heated through, about 2 mins.
