Ingredients

2 tbsp. olive oil
1 large onion, diced
1 large green pepper, diced
2 cloves of garlic, diced
1 lb.Butterball turkey Polsak Kielbasa sausage, diced
1 16oz bag of black or red red beans-cook & mash
them - reserve liquid.
1 can diced tomatoes no salt added
5 c. cooked brown rice
1/2 tsp. red pepper
1 tbsp. oregano
1 tsp. thyme
a pinch of. salt
1 tsp. black pepper

Directions
Heat oil in large soup pot over medium heat. Saute onions, green and red bell peppers, garlic until tender. Add spices and sausage. Saute until browned. Add canned tomatoes and beans. Reduce heat and simmer about 10 more minutes.
Number of Servings: 8 freezes well
To serve I dish up a cup of bean mix and top with 1/2 a cup of rice. Spoon some of the leftover bean liquid in it.
