Introduction

Ingredients

    Bacon, 5 medium slices, cooked lightly
    Beef, round steak, 1 lb pounded flat
    Spinach, frozen, 1 package (10 oz) thawed
    Parmesan Cheese, grated, 3/4 cup

Directions

1) pound the steak flat and as close to square as possible. thinner is better here.

2) layer the bacon, spinach, and cheese smoothly over the flattened steak.

3) roll into a tube down the long length of the meat and secure with skewers or string.

4) slice into 4 rounds (or 8, if you prefer a thinner more well done meat)

5) grill for 5 minutes on a side.

Makes 4 quarter pound servings.

    Very tasty! I put the whole thing in a 400 degree oven for about 40 minutes before slicing. I also rubbed a little olive oil, salt, pepper, and garlic powder into the steak before cooking. I also made a sauce using red wine and peppercorns and drizzled it over the top. Amazing! My hubby loved it. - 11/29/10
