Ingredients

    1 lb. eggplant, cut into 1"cubes
    2.5 tsp. EVOO (extra virgin olive oil)
    Salt & Pepper to taste
    1 C prepared tomato sauce
    1.5 tbp. chopped fresh basil or 2 tbp. dry
    1.5 C shredded low fat mozzarella

Directions

Preheat oven to 500 degrees F. Toss the cubed eggplant with the EVOO oil and season with salt & pepper. Place on a baking sheet and roast, tossing occasionally, for 20 minutes or until golden. Reduce the oven temperature to 425 degrees F. Transfer the eggplant to a 1 1/2-quart baking dish. Add the tomato sauce and basil and toss to coat the eggplant. Lay the mozzarella on top. Bake for 20 - 25 minutes, or until golden.

    My whole family likes this. However, after seeing the way it was presented on Dr. Oz, instead of cubing the eggplant, I sliced it thin. I also sliced up some zucchini to add to it. I also used canned diced Italian tomatoes instead of the sauce. I was basically the same calorie wise. - 11/4/10
