Ingredients

300 gr. self-raising whole grain flour
60 gr. sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
200 ml low-fat milk
1 egg
60 gr. melted margarine
220 gr. peeled and chopped apples (about 2 big ones)
Directions
Makes 12 muffins.
Mix the melted margarine and the sugar in the mixer bowl and beat them lightly. Add the egg and continue beating until it has a creamy texture. In another bowl stir together the flour, cinnamon and salt. Slowly add to the egg mixture alternatively the flour mixture and the milk until all the ingredients are smoothly mixed together. Add the apples and gently stir with a spoon. Put the mixture in a slightly greased 12-muffin pan. Bake for 20 minutes in a pre-heated oven at 190 C/374 F.
