Introduction

*Not included in nutritional info* Place prepped ingredients and cheese on top of crisp tortilla and broil until cheese melts, about 5 minutes. I brushed corn tortillas with olive oil infused with fresh cilantro and lime juice (put all three in a pan and heated up) then baked tortillas about 20 minutes or until crisp. I am eating the leftovers for lunch without the tortillas, just with a spoon. This can also top nachos or be served a dip with chips. Ingredients

    1 Can Black Beans
    2 Sweet Potatoes
    1/2 Onion, chopped
    2 Peppers (bell peppers)
    1 Can Green Chilies (any level of spice is nice)
    2 Tbsp Olive Oil, for cooking onion, peppers, sweet potatoes
    Any Cheese, shredded for topping (3 oz extra-sharp white cheddar for whole recipe for nutritional value)
    Garlic, 2 clove, minced
    1-2 Cups Tomatoes, chopped
    Cilantro, raw, 1 tbsp, minced
    Salt, 2 dash
    Lime juice, to taste

Directions

Prepare all ingredients, saute onions and peppers, then sweet potatoes (or: bake sweet potatoes, leave onions and peppers raw, whatever you like). Mix all ingredients in bowl, except cheese. Top with cheese and extra lime juice. Enjoy by itself or on top of tostadas, nachos, as a chip dip, on top of quinoa or rice, etc... Enjoy!
