Ingredients

    3/4 pound of cod
    10 reduced fat club crackers
    2 TBSP Parmesan cheese
    1/2 tsp lemon pepper
    Sprinkle of paprika

    Crumble the 10 crackers. Add Parm cheese and seasoning. Spray baking dish with Pam. Wash fillets and put in pan. Spray top of fish. Sprinkle crumb topping over fillets. Bake at 450 for 10 minutes or until when flaked open, fish looks white, not transparent.

    Very Good
    This was so easy and really tasty. I didn't have low fat club crackers, so I used 10 regular saltines. They actually have less fat, sodium and calories, and 0.8 gms more protein. Served with rice and a big squeeze of lemon juice, yummy! - 3/26/11

    Glad you liked it. I did not have club crackers today so I used Special K savory crackers and I liked it just as well, if not better. I have made it with bread crumbs but that is less tasty...
