Ingredients

    3 c organic vegetable broth
    1 lrg head cauliflower, divided flowerets & coarsely chopped stem
    2T dehydrated, chopped onion
    1T freshly ground black pepper

Directions

Place all ingredients in a crock pot or slow cooker. Turn on to Low & cook with lid on until cauliflower pieces break apart easily. Using a hand mixer (the long cylindrical type, NOT egg beater type), blend contents in cooker until smooth. Leave some larger chunks if desired or remove some of the cauliflower if you prefer a more textured soup. Add the large/removed pieces after blending the remainder. Makes 6 servings, size depends on size of your cauliflower.
