Introduction

This is a great quick breakfast item to prepare the night before. In the morning, just heat up a couple muffins and eat them on the go!

There are no limits on what ingredients you can use. Try sausage, mushrooms, broccoli, zucchini, etc....

Ingredients


    6 Eggs
    1/4 Cup Onions
    1/3 Package of frozen spinach
    1/2 Cup Milk 2%
    1/4 Cup Shredded Cheese

Directions

- preheat oven to 350 degrees.
- cook onions until translucent
- defrost spinach
- whisk 6 eggs and 1/2 cup milk

- add cheese and veggies, then pour mixture into muffin tins (about 1/4-1/2 way up)
- place in oven for 20-22 minutes until set
