Introduction

A simple and easy coffee cake, its quick to whip up on a weekend morning. Its not fancy, but sometimes that's not what you need!

I often make this for company, mixing the dry ingredients, and the wet in seperate bowls the night before, and mixing the two together in the morning. A nice breakfast without spending all my time slaving away.

Number of Servings: 12

Ingredients

    1 1/4 C. Flour
    1/3 C Sugar
    3 tsp Baking Powder
    1/4 tsp Salt
    1 Egg, beaten
    1/2 C. Milk
    1/4 C Oil

    Topping:
    2Tbs Sugar
    1/2 tsp Cinnamon Powder


Directions

Preheat oven to 350. Spray a 8x8 baking pan with non-stick spray.

Sift dry ingredients together into a bowl. Add eggs, milk, oil and mix until smooth.

Pour into prepared pan. Mix topping ingredents together. Sprinkle on top of batter.

Bake at 350 for about 15-20 minutes until toothpick inserted at center comes out clean.

    I liked this recipe- very simple! I just changed the oil to unsweetened applesauce, the sugar to Splenda, and next time I will try adding a little liquid(lemon juice or milk) to the topping mix- it seemed just a little dry. All in all, a great recipe, though- will definitely become a staple! - 10/23/10

    My girls loved this so much they were singing the word FANTASTIC at breakfast this morning as they gobbled up their cake. I packed it in my husband's lunch today too so I can't wait to hear his reviews. I did change the topping and instead of using white sugar I used brown sugar. - 7/20/10
