ABSOLUTELY YUM!!! Such an easy recipe.
This is dinner for two, so if you are solo, just half the ingredients.
Add a side of steamed, frozen asparagus and you have a complete meal for about 450 calories.

Ingredients

    2 Medium Potatoes
    4 oz fresh broccoli flowerettes (or frozen)
    1 Chicken Breast (mine was 9oz)
    2/3 cup of peas (frozen)
    8 mushrooms (fresh, sliced)
    1/2 cup Ragu light Alfredo Sauce (2/3 cup if you like more sauce *will increase calorie content per serving by 30)
    3/4 - 1 cup of water


Directions

1. Pierce potatoes and microwave on HIGH for 8 minutes or until tender.
2. Slice broccoli into small pieces.
3. Place chicken breast, mushrooms, broccoli, peas, and water into a nonstick pan on medium and cook until breast is no longer pink, and peas, mushrooms and broccoli are tender (generally after water has evaporated).
4. Shred chicken breast with a fork and return to pan.
5. Stir-in alfredo sauce to chicken, peas, broccoli, and mushrooms.
6. Split potatoes and scoop even helpings of chicken mixture over each potato.
7. CHOW DOWN ON SOME YUMMY POTATOES!!!
