Introduction

Number of Servings: 4

Ingredients

    1 Tsp Oil
    1 Red Onion, chopped
    1 Red Bell Pepper, chopped
    1 Green Bell Pepper, chopped
    4 cloves garlic, minced
    1/2 Cup Water
    1/2 Cup White Wine
    1 Cup Chicken Broth
    White Rice, medium grain
    1 lb. shrimp, peeled & deveined
    1 1/2 tsp Red Pepper - or more to taste
    Salt to taste

Directions

Heat oil until shines, add chopped Red Onion, Red and Green Bell Peppers, cook until tender and translucent, stir in garlic.

Stir in white rice, add salt to taste, stir in white wine, water and chicken broth and bring to boil for about 3 minutes.

Turn heat to low and cover. Cook for approximately 20 minutes. Clean and devein shrimp and cut into bite size pieces. Once rice has cooked 20 minutes, add shrimp for another 5 minutes.

Four servings. Really good with a little pepper jack cheese sprinkled on top
