Introduction

I put together this low-sodium chili recipe with my mom in mind (she's on low-sodium diet). If you're not watching your sodium, eat with saltines or tortilla chips. Ingredients

    1 med. onion, chopped
    1 Tbsp. canola oil
    3-5 cloves garlic, chopped
    1 lb. lean ground beef
    2 cans no-salt diced tomatoes, fire roasted, undrained
    2 cans no-salt-added kidney beans, drained
    1 1/2 cups water
    3-4 Tbsp chili powder (or more to taste)
    2 teaspoons gound cumin
    2 teaspoons sugar
    1 tsp Mrs. Dash chipotle seasoning

Directions

In a large pot, cook chopped onion in canola oil over low to medium heat for a few minutes, or until translucent. Add chopped garlic and cook for 30 seconds. Add ground beef and cook mixture for 5 to 10 minutes, or until beef is no longer pink. Spoon off fat to drain. Add remaining ingredients and cook on medium heat until bubbling. Reduce heat, cover, and cook on low to medium heat for 15 minutes, stirring occasionally. Remove lid and cook at least 15 additional minutes, stirring occasionally.
Makes approximately 6 bowl-size servings, 1 1/2 cups each.
