Ingredients

12 oz. Boneless skinless chicken breast
Tomato
2 T fat-free mayonnaise dressing
1/2 c. panko bread crumbs
1/4 c. asagio or parmesan cheese
1 tsp. olive oil
1 Tomato
basil leaves
salt & pepper, to taste
4 servings, whole wheat spaghetti (8 oz)
1/4 c. reduced fat pesto
Directions
Preheat oven to 350 degrees.
In the meantime, mix panko, cheese, salt and pepper in a shallow dish. Cut the chicken into four serving sizes of 4 oz. each. Dip the chicken into the mayonnaise dressing to coat. Roll the chicken in the panko mixture.
Place the chicken in a prepared casserole dish with cooking spray. Layer with tomato slice and basil leaves. sprinkle with olive oil. Cover and bake for 30 minutes.
While chicken is cooking cook spaghetti as directed. Mix with pesto. Place 1 c. spaghetti on each plate with one piece of chicken.
