Introduction

This recipe has turned into a tradition in our family for brunch when company is leaving after an overnight visit. Serve with seasonal fruit or vegetables for a satisfying meal! Ingredients

    Crust:, place in bowl and mix by hand with fork.
    3/4C stone ground whole wheat flour
    6T olive oil
    1T chopped fresh herbs in season,
    OR approx 1t. dried herbs to taste if not.
    5T ice water

    FILLING
    4 oz reduced fat Cheddar cheese
    8 oz 99% fat free diced ham
    8 oz Simply Whites egg whites in carton
    1 tsp Tapatio hot sauce
    Dash of Salt
    1 tsp pepper
    thyme, oregano, sage, or whatever herb you desire, opt.

    For crust, Put all except water in bowl, mix lightly and add water by tablespoon until dough cleans side of bowl. (Over mixing will toughen crust.)

    Roll out crust, put into 9"-10" pie shell, prick with fork all over and bake 8 min @400 degrees. Leave oven on.

    As soon as crust comes out of oven, sprinkle cheese evenly over bottom of crust and allow to melt. Sprinkle diced ham evenly over that and set aside. Mix egg whites, tapatio hot sauce, opt. herbs, salt and pepper in blender for a few seconds. Pour into crust and bake in preheated oven. Turn down to 350 degrees for about 45 minutes or until set. Let sit 5 min before cutting. Makes 6 generous servings.
