Introduction

Number of Servings: 6

Ingredients

    Ground beef, extra lean, 1 lb.
    Egg, fresh, 1 large
    Garlic, minced, 1 tsp.
    White Onion, raw, small, 1 half
    Progresso Bread Crumbs - Italian Style, 1/4 cup
    Parmesan Cheese, grated, 3 tbsp
    Contadina Stewed Tomatoes (1 can), 8 oz
    Green Bell Pepper, Green (medium), 1 half

Directions

In large mixing bowl, combine wet ingredients (meat, egg, tomatoes). Once mixed thoroughly by hand, add dry ingredients. Mix. Meat should be formed in the shape of a loaf.

Spray oven safe bowl or loaf pan with cooking spray. I like to use a Corningware bowl. Place loaf in pan/bowl.

Cook in oven for approximately 1 hour at 350 degrees. Meat loaf is ready when it pulls away from the sides of the pan or bowl.

Serving suggestion: I like to add some heart healthy pasa sauce and low fat mozzarella cheese when reheating.

Makes 6 servings of approximately 2.5 oz each.

    Very Good
    This was very tasty, very moist. The whole family liked it. Served it with wholewheat linguine. I will definitely be making it again. Since it only uses half an onion and half a green pepper I plan to double the recipe next time and put one loaf in the freezer. - 11/20/10
