Introduction

Ingredients

    1 1/2 cups uncooked brown rice
    500 gm lean ground beef
    1tbsp olive oil
    3/4 cup chopped onions
    1 cup chopped red pepper
    1 stalk celery, chopped
    1 cup chopped zucchini
    1 cup chopped mushrooms
    2 14oz cans of chopped or diced tomatoes
    2 tbsp oregano OR Italian seasoning (we prefer this)
    1 tsp salt
    1/2 tsp pepper

Directions

Cook the rice in 3 cups water, using a large pot capable of holding the rest of the ingredients. takes @ 40-45 minutes.
In a large saucepan brown the ground beef, drain any fat and set aside.
In the same pan, using olive oil, saute onions, peppers and celery about 5 minutes until onions begin to turn soft.
Add zucchini and mushrooms, continue cooking until mushrooms are almost cooked.
Add canned tomatoes, ground beef and spices, simmer for 20 minutes to blend flavors.
Add tomato-veggie mixture to the cooked rice, stir well and serve.
