Ingredients

    8 Eggs
    1/2 Cup Wheat Flour
    1 teaspoon baking powder
    3/4 teaspoon salt
    2 4oz. cans diced mild green chilies
    1 1/2 cups lowfat cottage cheese
    3 cups (12 oz) shredded reduced fat Monterey Jack cheese

Directions

In large mixing blowl, beat eggs until light (frothy). Mix together flour, baking powder and salt and add to eggs. Fold in cheeses and chilies. Turn into 9"x13" greased baking dish. Bake 350 degrees F for 40 minutes. Let stand 10 minutes. Cut and serve hot. Serve with favorite salsa. Serves 8 to 10.
