Introduction

An unexpected but refreshing combination of flavors! An unexpected but refreshing combination of flavors!
Number of Servings: 12

Ingredients

    1/2 of a large Watermelon
    1 Red Onion
    4 oz. Reduced Fat Feta Cheese
    2 tbsp Balsamic Vinegar (or Red Wine Vinegar)
    1 Lime - juiced
    Fresh mint, parsley, cilantro or basil

Directions

1. Cut red onion in half and slice thinly. Place in bowl with lime juice and vinegar. Toss to separate onion pieces and coat in dressing.
2. Cut watermelon into bite size pieces or use a melon baller. (I usually use half the water melon to leave plain and slice for those who aren't adventurous enough to try the salad.)
3. Toss the watermelon pieces, crumbled feta, onions and dressing to combine. Serve in a pretty bowl or in the hollowed out water melon rind.
4. Sprinkle with freshly chopped herbs to suit your taste &/or freshly ground black pepper.

    Incredible!
    I did not have any lime juice, mint, or red wine vinegar in the house, so I substituted a "tequila lime" seasoning and a little bit of a berry vinaigrette, and used the basil. Still came out really good. Great summer dish! - 7/1/12
