Introduction
Seasoning can be adjusted to suit your personal taste. Recipe can also be "enlarged" to feed more than one person. Sometimes I will add two eggs instead of one if I am really hungry. This makes a great breakfast, but can be made for any meal. Cheese can be left out if no fat is desired. Seasoning can be adjusted to suit your personal taste. Ingredients

1 cup Mixed Vegetables (I use a couple handfuls of my own mixture that I chop up and freeze-broccoli, cauliflower, yellow squash, mushrooms, carrots, onions, etc)
1 large egg
1/4 tsp Mrs. Dash Garlic and Herb Seasoning
1/8-1/4 tsp Ground Black Pepper
1/4 tsp Garlic Powder
1 oz Cheddar Cheese, grated
Directions
Pour a small amount of water in a small skillet, add the veggies and seasoning. Cover and let simmer until vegetables are tender. Add more water if needed at any time to keep everything from sticking. Scramble the egg and add it over veggies. Cook until mostly firm. Flip egg and veggies over. Sprinkle with cheese. Cover again and let finish cooking until egg is done and water is evaporated. Enjoy.
