Introduction

A highly favored treat, modified for those avoiding grains. A highly favored treat, modified for those avoiding grains.
Number of Servings: 30

Ingredients

    2 C. almond flour
    1 1/4 tsp pumpkin pie spice
    2 tsp baking powder
    1 tsp baking soda
    1 tsp liquid stevia
    1/4 C. walnut oil
    1/2 C. brown sugar (unpacked)
    6 egg whites
    1 can (15 oz.) pumpkin pie filling
    1 C. carrots, finely shredded

    First: Mix almond flour, pumpkin spice, baking powder & baking soda together

    Second: In a seperate bowl, combine brown sugar, stevia & oil. Add pumpkin pie filling, egg whites and carrots.

    Once both mixtures are thoroughly mixed, combine the two.

    spread evenly into pans. It may be desirable to, FIRST, line pans with parchment paper.

Directions

Preheat oven to 350
Grease (2) 11 x 7 pans, or your preference

Bake for approximately 25 minutes (ready when fork/toothpick/cake tester comes out clean, at center)

Result in texture is much like pumpkin pie (ooey gooey goodness), take care when slicing. Best to slice when cooled a bit.

    This has a lot of sugar added to it. Have you made it without sugar? If so, how is it? I am looking for desserts and this sounds interesting (except the sugar). - 12/21/10
