Ingredients

1 kg raw, skinless, boneless chicken breast cut into large pieces
1/2 cup chopped onion
2 tbsp corn oil
2 cloves garlic, minced
1 cup chopped tomato
1/2 cup chopped bell pepper
1/2 cup chopped cilentro
12 oz raw potato cut into large pieces
10 oz raw zucchini cut into large pieces
6 oz raw carrots cut into large pieces
1 tsp Madras curry powder
1 tsp tumeric powder
1 tsp cumin powder
1 tsp black lemon powder
1/2 tsp cinnamon powder
1/2 tsp cardamon powder
1/2 tsp ginger powder
1/4 tsp red kashmiri chili powder
2 Maggi chicken stock cubes
2 tbsp tomato paste (optional)
juice of 1 lemon (optional)
4 cups of water
Directions
Heat oil in large pot, add onion, stir. Cook until golden brown.
Add garlic and chicken. Stir.
Add the tomato, bell pepper, cilentro, and spices. Mix well.
Add remaining ingredients.
Cook until chicken is done and root vegetables are tender...about 45 mintues.
Serve with basmati rice or pita bread.
