Introduction

These are a dense muffin but very filling. Can be vegan by replacing milk with soy milk. These are a dense muffin but very filling. Can be vegan by replacing milk with soy milk.

Ingredients

    1 cup oatmeal
    1 cup whole wheat flour
    1 teaspoon baking powder
    1/2 teaspoon baking soda
    1/4 salt
    1/2 teaspoon cinnamon

    1 tablespoon flaxseed meal
    2 tablespoon water

    1/2 cup 1% milk
    1/4 cup unsweetened applesauce
    1 teaspoon vanilla
    1/4 cup brown sugar

    1 cup frozen blueberries
    1/2 cup chopped walnuts

Directions

In large bowl combine oats, flour, baking powder, baking soda, salt and cinnamon. In small bowl combine flax seed meal and water and mix until it thickens up a bit. Add milk, applesauce, vanilla, and sugar to flax seed mixture. Add the wet mixture to the dry mixture and gently fold together. Gently stir in blueberries and nuts.

Spoon into prepared muffin tins and bake for 20-25 minutes @ 400 until toothpick comes out clean.
