Introduction

Traditionally served with tahini sauce, but I am happy eating them with low calorie ranch dipping sauce. Also good in a pita with salad and tomatoes.

Ingredients

    1 (15-ounce) can chickpeas, preferably low-sodium, drained and rinsed
    1/4 cup minced onion
    2 cloves garlic, minced
    2 teaspoons ground cumin
    1/2 teaspoon ground coriander
    1/2 teaspoon salt
    1/4 cup cilantro leaves
    1/4 cup parsley leaves
    2 tablespoons olive oil

Directions

1) Place all items (except oil) in food processor and pulse into a paste.

2) Scoop out 16 balls and smoosh into 1/2 inch thick patties...about the size of a silver dollar.

3) Brush patties with olive oil

4) Bake 40 minutes @ 425, turning after 20 minutes.

Makes 4 (4 patty) servings @ 42 calories a patty
