Ingredients

    8 oz uncooked pasta such as shell or campenelle
    1 cup part skim ricotta cheese
    1 t grated lemon peel
    1 T fresh lemon Juice
    1/4 cup chopped fresh basil
    3/4 t salt
    1/2 t pepper
    Lemon Wedge

Directions

1. cook the pasta according to directions. Drain, reserveing 1/4 cup cooking liquid.

2. Combine ricotta, next 5 ingredients and reserved cooking liquid in large bowl. Add the pasta and toss to combine. Garnish with lemon.

Serving size 1 cup.
