Ingredients

1 lb Smoked Sausage
3 Large Potatoes cut into 1/4 inch slices
3/4 C Chopped Onion
6 slices of bacon
1 1/2 tsp Minced Garlic
2 C Fresh Kale, Washed, Dried & Shredded
2 Tb Chicken Soup Base
1 Quart Water
1/3 C Heavy Whipping Cream or Milk. (Anna uses evaporated milk
1-15oz Can of Black Eyed Peas
Directions
Makes 8 1-cup servings.
Place sausage on a sprayed baking sheet and bake at 350 degrees for 25 minutes
Cut Bacon in 1/2 inch pieces and fry in a large sauce pan or dutch oven. Remove bacon and leave grease.Add onions, saute for 3-5 minutes.
Add garlic and saute another minute
Drain all grease and discard it.
Add Soup Base, Water, and potatoes. Bring to boil and simmer for about 10 minutes. Potatoes should still be a little crisp.
Add Bacon, sausage, Kale, black-eyed peas, and milk. Simmer 5 minutes. Serve
(Anna says it is better if you let it set overnight in the refrigerator and reheat to serve)
