Ingredients

    1lb Lean ground turkey or beef
    1lb stew meat - optional, but we like the chunks of meat along with the ground meat
    1 large onion chopped into chunks
    1 large green bell pepper - chunked
    1 large red bell pepper - chunked
    3 cans of kidney beans - we use a mixture of light and dark for color - drain 2 of the 3
    2 large cans of diced tomatos
    1 large jar or can of sliced mushrooms
    1 small package of baby carrots sliced in half
    chilli powder to taste
    garlic powder to taste

Directions

If using stew meat, brown the chunks in a skillet and set aside. In a large stock pot, add turkey meat, onions and bell peppers and season with garlic powder and any other spices you prefer. Cook until meat is brown and veggies are starting to soften. Add in stew meat, beans, tomatos, mushrooms, carrots and chilli powder. Stir until combined, cover and simmer for about an hour.

Im not really good with exact amounts, I usually just dump everything into the pot, but I did my best to guess for this recipe... I dont really see how you can mess this one up. This makes a huge amount of food and its great warmed up during the week for lunches. We like to make this on the weekends during the fall and winter and eat it all week! Its great with a dollop of light sour cream mixed into your bowl and a sprinkle of lowfat cheese or just as is!
