Number of Servings: 10

Ingredients

    Garlic, 3 cloves, minced
    1T red pepper flakes
    1 medium Yellow Onion
    8C vegetable broth (I use Better Than Bouillon No Beef Base)
    8oz can Italian Plum Tomatoes
    1 medium Red Potato
    Organic Red Lentils
    2 large Carrots, diced
    3 Celery stalks, diced
    15oz can Organic Kidney Beans, rinsed
    15oz can Organic Organic Pinto Beans, rinsed
    1 bunch Red Swiss Chard, cut into 1" pieces
    Dash of Oregano
    Juice of 1 Lemon
    Black pepper to taste

Directions

Saute garlic & red pepper flakes in 2T of the broth for a few minutes. Add onion and a bit more broth, if needed, and saute until translucent. Add remaining broth & tomatoes. Cook for 5 minutes than add potato & lentils, carrots and celery. Cook for 15 minutes. Add all remaining ingredients except Black Pepper. Simmer until beans are heated through and chard is wilted.

Garnish with black pepper.
