Ingredients

10 Tomatillos, cooked
1 Fresh Jalapeno, diced
1 Red bell pepper, diced
1 Medium onion, diced
2 cups Black Beans, cooked and drained
Morning Star Farms Vegan Chicken Strips Meal Started - pack
Vegan Mozzarella Cheese
10 Corn Tortillas
Herbs (cilantro) and spices to taste
Directions
Sauce: Use the food processor to turn the tomatillos into a sauce, I like to add some cilantro here for extra flavor.
Filling: Cook chicken strips in a skillet according to package directions, add the onions, bell peppers, jalapenos, herbs and spices to taste. Cook for a few minutes. Add the beans and 1/2 cup of the sauce to the mixture and set aside.
Putting it together: Use 1/4 cup of the sauce to coat the bottom of a deep baking dish. Fill the tortillas with the filling and set them in the baking dish side by side. Use the remaining sauce to cover the tortillas. Add the cheese on top of everything and bake at 400F for 20 min or until it is cooked throughly and the cheese is bubbly . Enjoy!
