    butter unsalted .5 lb
    granulated sugar 2 cups
    brown sugar 2 cups
    Large eggs 10 ea
    canned pinapple 20 oz
    vanilla extract 1 tsp
    Flour white 4.25 Cups
    Salt 1 tsp
    baking soda 0.5 tsp
    Cinnamon ground 1 tsp
    Nutmeg ground 1.5 tsp
    Pecans 1 lb.
    red and green mixed glace cherries 1 lb.
    mixed peel 1 lb.
    dried currents 1.5 cups
    sultana raisins dark 2 lb
    dark seedless raisins 1 lb
    Rum 2 cups

Directions

makes 48 0.75 inch servings from loaf pan
Blend butter sugars and whip until creamy
Add eggs
Add pineapple and vanilla
sift the flour and soda and salt and spice together
Mix all fuits and nuts and rinse to lower sugar content
Add 0.5 cups rum
mix everything together and bake in loaf pans 4 ea.
bake at 275 for 3.5 hours with water pan in oven to prevent caramalizing of the abundant fruit
