Ingredients

1 1/2 cups 100% natural wheat bran cereal (Kellogs brand used in calculation)
1/2 cup boiling water
1 large egg, beaten
1 cup all-purpose flour
3/4 cup buttermilk
2/3 cup sugar
1/4 cup vegetable oil
1 1/4 taspoons baking soda
1/2 teaspoon salt
Directions
Preaheat oven to 400 degrees Fahrenheit. Coat 12 muffin cups with cooking spray.
Combine cereal and boiling water in large bowl. Stir to mix and let stand 1 minute.
Stir in egg, flour, buttermilk, sugar, oil, baking soda, and salt until blended.
Spoon batter into prepared muffin cups, dividing batter equally.
Bake muffins until golden brown, 18-22 minutes. Remove from pans immediately and cool on wire racks.
Notes: Batter can be refrigerated for up to 4 weeks. Muffins can be baked one at a time by filling 1 paper cup liner 2/3 full of batter and microwaving on high for 45-60 seconds. Microwaves vary in strength. You may need to experiment a bit to find the exact settings for your microwave.
