Ingredients

1 cup minus 2 Tbsp sifted all-purpose flour
2 Tbsp soy flour (replaces 2 Tbsp white flour) OR just use 1 c. white flour
1/2 tsp baking soda
1 1/2 cups rolled oats
1 oz. chopped walnuts (14 walnut halves)
1/4 tsp cinnamon
1/4 tsp nutmeg
2 egg whites, lightly beaten , or Eggbeaters (for 2 eggs)
1/2 cup brown sugar not packed
1/3 cup applesauce unsweetened
1/3 cup 1% milk
1 tsp vanilla extract
2/3 cup raisins
Directions
Serving size is 1/36 of recipe (makes 3 dozen). Each cookie is about 1 3/4 to 2 inches (4-5cm) in diameter.
Bake at 375 F. on greased cookie sheet for 12-15 minutes. Grease the sheet well, because with no added fat of their own, these cookies stick and removing them becomes a new fitness exercise in itself! They do not spread so they can be placed close together on the sheet.
